The Recipe

I start with my three favorite tea estates of the moment; Ceciliyan, Needwood and Jamguri; and blend them to create a lighter tea - more of the Ceylon, less of the malty Assam.

Special Ingredients: Australian Lemon Myrtle from Lismore on the northern coast of NSW.

Lemon Myrtle is an Australian native tree whose leaves have an intense and distinct lemon aroma.

I became enchanted with Australian native herbs and spices when I discovered them growing wild on my 46-acre piece of paradise; an isolated rainforest block in the Strezlecki Mountain Ranges, a haven of Mountain Ash, tree ferns, lyre-birds, wombats and wallabys.

I have added just a twist of Lemon Myrtle to this classic Earl Grey recipe for a slightly sweet, lighter top note from home.

What To Expect:

A honeylike aroma, mingled with the citrus notes of Bergamot and Lemon Myrtle. A fragrant, light elegant tea.
