Organic Mints title

I’ve blended organic mints and lavender flowers, with a finishing touch of Australian peppermint gum leaf.

‘What makes a beautiful mint tea?’, I ponder in the rainforest of our Gippsland retreat. My favourite Mountain Ash towers above the tree ferns, comforting with her timeless presence. A lyrebird parades outside – a rare and special surprise.

I start with organic peppermint, grown seasonally in Victoria and in Egypt. For depth, I add fine Egyptian spearmint, and to soothe the senses, lavender flowers. The finishing touch is a new discovery: Australian Peppermint Gum leaf. Yes, these are the leaves of a gum tree, grown just around the mountain by small farmers.

How to get the most out of it

Place pyramid in your favourite cup. Pour in fresh water heated to 85°. Infuse for 3-5 minutes and watch the leaves unfurl as you anticipate that first satisfying sip.

My favourite mint to add a distinctive note to herbal teas is from Australia. We have three types native to our sunburnt country, all of which can grow in the south. After much experimentation, I found Round Leaf Mint is my choice for the Mint Lavender tisane. Unlike the other native mints – river mint.
